Discover Thailand and all its flavours! From Chiang Mai to Bangkok, the culinary theme is the thread of the trip. Whether a lunch in a local restaurant, among Thai farmers or at great restaurant in Chiang Mai, the important thing is the variety of dishes, rich tastes and the flavours of each region. First discover Bangkok, the bubbling cultural and economic capital.

A trip by long tail boat on the canals (klong) of Bangkok enables a discovery of the different aspects of everyday life of the Thai people and the contrasts of Bangkok, you’ll also enjoy a bicycle tour of a green oasis close to this great metropolis. In Bangkok, you will have you first “hands-on” experience with Thai cuisine and learn how to cook four dishes in a renowned cooking school along the Chao Praya River. Then towards Chiang Mai, ‘The Rose of the North’, where you explore the old town by pick-up taxi and rikshaw. You will enjoy a second cooking experience in a biological farm and visit a local market. While enjoying daily the culinary delights of Chiang Mai you will also experience the inevitable highlights such as its temple on the Doi Suthep mountain, an elephant safari through the jungle on the back of an elephant and bamboo rafting.

PROGRAM ITINERARY

DAY BY DAY DESCRIPTION OF THIS EXCEPTIONAL ADVENTURE THEME PROGRAM

DAY 1 (LUNCH/DINNER)

BANGKOK

On arrival at the airport you are met by your guide who will take you to your hotel. Your morning is free at leisure for you to rest from your trip. After your lunch in a local restaurant you enjoy a trip in a longtail boat on the canals (klong) of Bangkok. You will discover different aspects of the daily life of the Thai people and the contrasts of Bangkok. Along the way, you stop at the majestic Wat Arun or Temple of Dawn, with his prang (Khmer style spire) inlaid with colourful pieces of china, followed with a colourful visit, walking through the Pak Klong Thalad, the biggest flower- and vegetable market in the capital and your transfer back to your hotel. Diner at the hotel.

DAY 2 (BREAKFAST/LUNCH/DINNER)

BANGKOK

This morning you board from the pontoon located behind the Royal Palace for a nice boat trip on the Chao Phraya, the “River of Kings”. After a trip of about half an hour, you reach the Amita Thai Cooking Class where a welcome drink will be served as refreshment. Then an instructor will offer you a work program for an exciting four-course preparation. It will start with an introduction to the secrets of Thai cuisine by visiting the garden with herbs and spices, to pick out the ingredients for your Thai dishes. The instructor will then make a demonstration of the dishes you will undertake and provide you with the recipes to use. Now go start with the hands-on practical experience. You will have your own personal work station and a wok. You will realize your culinary masterpiece, assisted by the instructor and his assistants. Once your dishes are realized you will have the opportunity to savour them in the garden or in the Thai-style pavilion of the school, before heading back to your hotel in the early afternoon. In the evening you attend the dazzling show of Siam Niramit, presenting the arts and culture of different regions of Thailand. A world class show with 150 artists on an animated scene by technical and special effects of the latest quality. The fairytale mixed with the genuine. Before the show, you can enjoy a delicious Thai-Western buffet in one of their restaurants.

DAY 3 (BREAKFAST/LUNCH)

BANGKOK

Today, you will be immersed in a green oasis in a place that is called the “lungs of Bangkok”, so close to the great metropolis. You will be initially lead to the Wat Bang Na Nok pier where you will embark a boat to cross the river and dock near Baan Tup, where medicinal herbs are made. You then begin a bike ride that will take you to the nature. You will be surprised to travel on elevated concrete paths through groves of palm trees and tropical plantations. You can relax in the public park Nakhon Sri Kuenkhan before continuing your exploration and discovery of local temples, schools and tropical fruit gardens. In addition, if you are here on a Saturday or Sunday, you will also have the opportunity to see the floating market of Talad Nam Peung (the “Honey Market”) and mingle with the authentic life of the local people. After lunch at a local restaurant (Lunch * 02), you will be escorted to the pier to cross the river, return to your hotel and enjoy en evening free at leisure.

DAY 4 (BREAKFAST/LUNCH/DINNER)

BANGKOK-CHIANG MAI

This morning you will be transferred to the airport of Bangkok for your domestic flight to Chiang Mai. Upon arrival in Chiang Mai airport you will be met by your driver who will take you to your hotel. After your lunch in a local restaurant (*Lunch 03), you visit the Warorot market, known locally as “Kad Luang”. This is the main local market, a popular place where you can see the real Chiang Mai. The entire ground floor is devoted to food and fresh produce. On the first and second floors you will find clothing, handicrafts, cosmetics, shoes and anything else you’re looking for! A must see to understand the daily life of Thai. A rickshaw ride will take you to the old city and the two main temples. You visit the Wat Phra Singh, which houses a large statue of Buddha: the Phra Buddha Sihing (“the Lion Boudhha”) which gives its name to the temple. It was built in 1345 and is an excellent example of classical Lanna architecture. At the entrance, Ho Trai, the library of the temple, is one of the most beautiful temple libraries of Thailand.

You will then visit Wat Chedi Luang, with a height of 82 m and a base of 44 m square, it was once the largest building in all of Lanna. In 1468, the Emerald Buddha (now at the Royal Palace in Bangkok) was installed in the niche at the east side. In 1545, 30 m from the upper part of the structure collapsed after an earthquake. In the early 1990s, the chedi was partly rebuilt and in 1995, a copy of the Emerald Buddha made of black jade was placed in the reconstructed eastern niche. In the gardens of the temple you can find the chapel that houses the City Pillar (Lak Muang) of Chiang Mai, where the protective spirits of the city are located.

In the evening you will enjoy a Khantoke dinner, a traditional meal of northern Thailand. It is named after the round tray in teak wood “toke” and the food bowls “khan”. The toke generally presents culinary specialties of the region. The guests sit around the tray on the floor and share the dishes, creating a friendly atmosphere. This type of dinner was once reserved for special occasions such as weddings or funerals. Nowadays, during the Khantoke dinner, a show of traditional Thai dancing takes place. The dancers are accompanied by traditional music. The costumes are resplendent and the dances allow us to live the Thai folk, while lightning shines on the dancers and gives a magical atmosphere to the place.

DAY 5 (BREAKFAST/LUNCH/DINNER)

CHIANG MAI

This morning you are ready for a cooking day at an organic farm. You start by visiting a colourful and bustling local market, just outside the city, the Ruamchook market (“the market that brings you chance”). Then you get to Mae Jo in Sansai District, known for its agricultural university. But you, you will continue your journey a little further to get to the organic farm where an instructor will give you all the information you want on organic ingredients that are produced on the farm. You will also have the opportunity to pick some of them. After this informative time, you can practice your art from an individual workstation, while instructions and explanations are given in English by the instructor. If you are thirsty, you will have water and herbal teas available. You learn to cook rice according to Thai method and you start preparing the curry paste of your choice. Then you will cook three dishes you have chosen from the range of dishes that are suggested to create a typical Thai lunch.

Then comes the time to enjoy the meal followed by a well-deserved time of relaxation, because the day is not over yet. Indeed, during the afternoon you learn to cook two extra dishes. After this exciting day where you have been able to learn, in a local smiling context, how to master the Thai cuisine, you are escorted back to your hotel. Dinner at local restaurant (Diner *02).

DAY 6 (BREAKFAST/LUNCH)

CHIANG MAI

After breakfast you go to the beautiful mountainous region of Chiang Dao where you visit an elephant training camp. This Elephant Conservation Centre combines the cultural interest with environmental concern. Elephants have played a key role as a tool of work, during the heyday of the teak industry. That era is now over and a number of elephants have found refuge at the Centre. Visitors can admire the skill of these forest mammals and their surprising mastery in the field of painting. Not to forget the spectacle of their swim in the river. You also experience an extraordinary safari on elephant back through the jungle. Your adventure and your discovery of nature is complemented by a bamboo raft ride through the jungle. Then you have lunch at a local restaurant (lunch *04). You continue your day with a visit to a famous orchid nursery in Mae Rim, with over 300 identified varieties. A great show of brilliant colours where you will have plenty of time to admire their beauty.

DAY 7 (BREAKFAST/LUNCH)

CHIANG MAI

After breakfast, you visit the temple of Doi Suthep, one of the largest Buddhist temples in the north. This is an important place of pilgrimage dating from the late 14th century. Located at an altitude of 1,054 meters, at the summit of the mountain you can enjoy a spectacular panoramic view of the city. You will learn the legend of the white elephant, carrying the relics of Buddha, which is the origin of this site. Back in Chiang Mai, you will enjoy lunch at a local restaurant (*Lunch 05) before visiting the different centres of local crafts that are the hallmark of the region, like silk weaving, manufacturing of umbrellas and fans and the art of jewellery. A good opportunity to appreciate the artistic talents of the craftsmen from Chiang Mai and to do your souvenir shopping! Evening free at leisure.

DAY 8 (BREAKFAST)

CHIANG MAI – BANGKOK

At the appropriate time, you will be transferred the airport of Chiang Mai for your flight to Bangkok and your beach extension or your connecting flight back home.
